Veggie “fried” rice. Sauté chopped onions, carrots, and garlic in a pan, adding water as needed. When almost done, add frozen peas. Throw in already cooked rice and a couple tablespoons of your favorite low-sodium sauce. Stir really well with the heat on high, and when you’re done, add sesame seeds and chopped green onions 😊
